My lunch today was amazing, delicious and of course CLEAN. I thought I'd give you all a little food tease and maybe some inspiration. I cooked up a turkey burger on the stove and topped it with fresh avocado and organic white corn and black bean salsa. I've been getting my avocados from farm fresh for a pretty good deal and they are HUGE. Avocados are a healthy way of getting the fat your body needs. I eat around 5 a week.
As a side dish I tried something new and yummy today using plantains and avocados. Most people don't know what plantains are and probably think they are looking at weird bananas whenever they see them in the store. Most people also don't know that plantains have more potassium than a banana. The down side is that you have to cook them and can't eat them raw like a banana. I found my love for them 3 years ago when I went on my first missions trip to Nicaragua and have eaten them ever since then. I get mine for 50 cents a piece at the grocery store.
I cut one plantain up into little slices and cooked them on the stove in coconut oil. I sprinkle a little sea salt in the pan for taste. I flip them once the bottoms have a little brown. It takes me about 15 minutes to make them, longer if I want them crispier. Next I added the other half of my avocado on the top of each slice. I couldn't BELIEVE how tasty and colorful they were.
I decided instead if being boring and calling them plantain bites I would be a little more creative. Since they are green and gold/yellow, I decided to call them Packers. I'm in no way a Green Bay packers fan but it was a fun way to name my food. I love that after eating a clean meal like this I feel full but not a GROSS full that leaves me tired and guilty. I'm around 100 days of eating clean and have become a better cook and look leaner and healthier than I have in my whole life. Can't wait for the next 100 days- Always changing and getting better!
